"Ounce at The Dolphin"

As many of you are aware there has recently been a great deal rumour and speculation about Ounce at The Dolphin.

We have refrained from comment on the rumours out of respect to a request from Ounce's owners, for confidentiality during a period in which some commercially sensitive discussions were taking place.

Whilst some information escaped from other sources and spread widely, we continued to respect this undertaking until we had agreement from our tenants and a clear statement on the matter.

The following statement is from Shane and Amy Peckover - and we hope puts their position clearly. 

“The negotiations taking place behind Ounce potentially leaving The Dolphin was for Ounce to grow.

Ounce is in process of opening a third venue and we felt by having THREE restaurants, the pressure on an independent business of our size could have been too much and we didn’t want to jeopardise our reputation by spreading ourselves to thin. 

Ounce Bishampton would on paper have had the smallest turnover out of our THREE restaurants due to size and location of venue.

Hospitality is harder than ever before and we have to make difficult decisions every single day in order to keep growing. 

But if the terms were not right for both ourselves or the PC in Ounce leaving Bishampton then nothing changes.

We love being in Bishampton and are just as excited “if maybe a little scared” to hit the ground running in having THREE venues.

We will be pulling our sleeves up even further, working harder and looking forwards to the journey ahead. The PC have been great in supporting us and I hope are as excited to continue working alongside Ounce at The Dolphin going forwards”

We continue to work with our tenants on a routine basis and hope that the villages will continue to appreciate and support the pub and enjoy their hospitality through the rest of their tenancy.

Times are exceedingly difficult for all hospitality businesses and I'm sure people will join with us in wishing the Ounce team continued success at The Dolphin and also in this exciting new venture time for The Ounce Collection.
